Folosesti coloana vertebrala cu coaste, gat cu carne frageda, cap de miel taiat in doua (din care indepartezi ochii din orbite si ii arunci), precum si alte bucatele razlete de carne.Acestea le acoperi cu apa rece, adaugi 2 lingurite cu varf de sare si le pui la fiert. Pe parcurs, indepartezi constant spuma formata la suprafata.Intre timp, cureti si speli zarzavaturile si legumele necesare pentru ciorba de miel. Pe langa morcovii din imagine, mai cureti inca un morcov, pe care il vei taia ulterior in rondele, odata cu restul legumelor.Radacinoasele (pastarnac, patrunjel, telina si cei doi morcovi) le razi pe razatoarea mare. Daca preferi, le poti taia si in cubulete.Pregatesti o cratita potrivita in care calesti zarzavatul ras cu 2 linguri de ulei, la foc mic, timp de 4-5 minute, sub capac. Amesteci din cand in cand ca sa nu se prinda. Prin aceasta calire intensifici gustul, aroma si culoarea legumelor.Dupa ce ai spumat bine supa si a fiert aproximativ 10-15 minute, adaugi zarzavaturile calite in oala. Completezi cu aproximativ 2 L de apa fierbinte si o lingurita de sare. Tot atunci pui si o crenguta de cimbru uscat, pe care o scoti la final, daca nu iti place.Aduci totul din nou la fierbere, la foc mediu. Dupa aproximativ 30 de minute verifici carnea cu o furculita ca sa vezi daca este frageda si fiarta, apoi o scoti din oala cu o spumiera.Dupa ce se racoreste aproximativ 10 minute, dezosezi carnea cu grija, desfacand totul bucatica cu bucatica si scotand cat mai multa carne de pe oase. Poti pastra si doua bucati de gat pentru cei care vor sa rontaie oasele direct din farfurie. Pui carnea deoparte pana la final.Restul legumelor (ceapa, cartofi, ardei rosu si morcovul pastrat) le tai in cubulete sau felii si le adaugi in oala, continuand fierberea inca 15-20 de minute.Cand cartofii sunt moi, ciorba este aproape gata.Pentru acrit, incalzesti 0,5 L de bors de casa pana la punctul de fierbere, ca sa elimini eventualele bacterii de fermentatie. Apoi torni borsul clocotit in oala si opresti focul. Abia atunci adaugi carnea inapoi in ciorba si amesteci usor.La final, toci cateva frunze de leustean si le presari in ciorba pentru aroma.Obtii aproximativ 5 L de bors de miel cu leustean, aromat si gustos, pe care il servesti fierbinte, imediat dupa ce ai oprit focul.
