Dac\u0103 un kilogram de f\u0103in\u0103 negr\u0103 cost\u0103 peste 2 lei, unul de f\u0103in\u0103 alb\u0103 e aproape la jum\u0103tate de pre\u021b. Extractul de mal\u021b colorant cost\u0103 cam 8 lei kilogramul, dar se folose\u0219te foarte pu\u021bin (conform re\u021betei furnizate de un brutar, \u00eentre 2 \u0219i 5 kg de esen\u021b\u0103 de mal\u021b ajung s\u0103 transforme \u00een p\u00e2ine neagr\u0103 100 kg de f\u0103in\u0103 alb\u0103).<\/p>\n<p>F\u0103ina neagr\u0103 este f\u0103ina cu 72% cenu\u015f\u0103 de panifica\u0163ie \u00een compozi\u0163ie, explic\u0103 morarul Vasile Bunescu. Con\u0163ine \u015fi t\u0103r\u00e2\u0163e \u015fi fibre, plus nutrien\u0163i, comparativ cu f\u0103ina alb\u0103 colorat\u0103 cu mal\u021b care nu are substan\u021be nutritive importante, dar con\u021bine zaharuri care pot ridica probleme diabeticilor. Lumea a uitat c\u0103 o p\u00e2ine neagr\u0103 nu poate fi pufoas\u0103, deoarece \u00een mod natural compozi\u021bia sa chimic\u0103 nu permite af\u00e2narea excesiv\u0103. E similaar cu p\u00e2\u021binea din secar\u0103.<\/p>\n<p> Nimeni nu \u00ee\u0219i pune problema c\u0103 o p\u00e2ine prea u\u0219oar\u0103 \u0219i aerat\u0103 e de fapt plin\u0103 de chimicale. \u201dAmelioratorii folosi\u021bi \u00een panifica\u021bie sunt substan\u021be sau ingrediente care se folosesc \u00een scopul \u00eembun\u0103t\u0103\u021birii calit\u0103\u021bii produsului finit sau a comport\u0103rii aluatului \u00een timpul procesului tehnologic. Folosirea amelioratorilor conduce la ob\u0163inerea unor produse de calitate \u00een ceea ce prive\u015fte structura miezului, culoarea cojii, aspectul, volumul, prospe\u0163imea \u015fi aroma. Substan\u0163ele de ameliorare folosite \u00een panifica\u021bie se pot clasifica \u00een: substan\u0163e chimice (cu ac\u021biune oxidant\u0103 sau reduc\u0103toare); produse enzimatice; emulgatori; al\u0163i compu\u015fi de ameliorare.<\/p>\n<p>Agentii de oxidare se folosesc \u00een scopul \u00eembun\u0103t\u0103\u021birii structurii glutenului prin cre\u015fterea rezisten\u0163ei sale elastice \u0219i reducerea extensibilit\u0103\u0163ii. Rezultatul final pentru brutar va consta \u00een \u00eembun\u0103t\u0103\u0163irea t\u0103riei aluatului, cre\u0219terii capacitatii de re\u0163inere a gazelor \u015fi o mai bun\u0103 dezvoltare la coacere. Printre principalii agen\u0163i de oxidare folosi\u0163i \u00een panifica\u0163ie sunt: acidul ascorbic, bromatul sau iodatul de potasiu. Acidul ascorbic (vitamina C) reprezint\u0103 cel mai important agent de ameliorare, a c\u0103rui utilizare nu sufer\u0103 restric\u0163ii sanitare. Agen\u0163ii reduc\u0103tori au efect opus agen\u021bilor oxidan\u021bi. Rolul lor este de a sl\u0103bi structura proteic\u0103 a aluatului, care astfel va fi malaxat mai pu\u0163in. Cel mai folosit agent reduc\u0103tor este L-cisteina. Al\u0163i agen\u0163i reduc\u0103tori sunt sulfi\u0163ii, care \u00eens\u0103 pot da reac\u0163ii alergice \u015fi glutationul redus sub forma drojdiei dezactivate. Aceste substan\u0163e conduc la cre\u015fterea volumului p\u00e2inii, ob\u0163inerea unui miez mai deschis la culoare, textura mai bun\u00e3 a p\u00e2inii. (\u2026) Emulgatorii sunt substan\u0163e tensioactive sau agen\u0163i de suprafa\u0163\u0103 care adaugati in aluat conduc la obtinerea de produse cu volum m\u0103rit, coaja mai fraged\u0103, miez mai fin, cu pere\u0163ii porilor sub\u0163iri \u015fi culoarea mai deschis\u0103. Totodat\u0103 produsele \u00ee\u015fi men\u0163in prospe\u0163imea timp mai \u00eendelungat\u201d, explic\u0103 prof. univ. Ersilia Alexa.<\/p>\n<p><strong>\u201dP\u00e2ine ca la mama acas\u0103\u201d : un produs scump \u0219i foarte rar<\/strong><\/p>\n<p>\u00cen Timi\u0219oara exist\u0103 o singur\u0103 brut\u0103rie artizanal\u0103 unde p\u00e2inea se na\u0219te dup\u0103 metoda tradi\u021bional\u0103, din f\u0103in\u0103 bio, ap\u0103, maia de drojdie \u0219i sare. Pre\u021bul mediu al unei p\u00e2ini este de 8 \u2013 9 lei. Procesul de fabrica\u021bie dureaz\u0103 timp \u00eendelungat. \u201dO p\u00e2ine se face \u00een dou\u0103 zile. Maiaua, \u00een func\u021bie de re\u021bet\u0103 se preg\u0103te\u0219te cu 12 sau 24 de ore \u00eenainte, apoi p\u00e2inea se las\u0103 peste noapte la dospit\u201d, spune Codru\u021ba Popa, proprietarul afacerii.<\/p>\n<p>\u00cen restul brut\u0103riilor, procesul de fabricare al p\u00e2inii dureaz\u0103 maxim o or\u0103 \u0219i jum\u0103tate. Studiul a fost prezentat acum doi ani de Protec\u0163ia Consumatorului. Un inventar al p\u00e2inilor de pe pia\u0163\u0103 a ar\u0103tat c\u0103 \u00een interiorul acestora\u00a0 se reg\u0103sesc de regul\u0103 14 E-uri.
